Mother’s Day is a celebration that is meant to honor mothers and rejoice motherhood, maternal bonds and the power of mothers in the society. It is always celebrated on various days in different parts of the world, most commonly during March, April, or May.
This year in the USA it is May 11th. How are you honoring your mother? Share your stories on the Letterstooursons Facebook Page.
Plan ahead what you want to do. Does she live near, if not, you’ll want time to mail or ship your cards and gifts. You’ll need to know when she’s available because you should always be prepared. Smoked Salmon and Cream Cheese Omelette with Green Onions
Whisk eight eggs and 1/4 cup heavy cream together in a large bowl. Heat 2 tbsp. butter in a large non-stick pan over medium heat. Add eggs and cook using a spatula to swirl the mixture for consistent cooking. When the eggs begin to set, add 1/3 lb. smoked salmon pieces and 1 cup room-temperature cream cheese. Sprinkle with chopped green onion and fold. Slide omelet onto a plate and slice. Serves four. Let me know how it turns out.
